These Easter biscuits which contain currants and candied mixed peel are traditional served in Greece at Easter. They are topped with a crunchy sugar glaze.

Makes: 30 biscuits

  • 1 2/3 cups plain flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon mixed spice
  • 1/3 cup currants
  • 2 tablespoons candied mixed peel
  • 110g unsalted butter, softened
  • 1/2 cup sugar
  • 1 egg, separated
  • 1-2 tablespoons milk
  • sugar, for sprinkling

  1. In a mixing bowl, sift together flour, salt, cinnamon and mixed spice. Stir in the currants and mixed peel.
  2. In a bowl with an electric mixer beat butter and sugar until light and creamy, 1-2 minutes. Beat in egg yolk until well blended. Stir in flour mixture, adding milk gradually to form a stiff dough.
  3. Wrap the dough in plastic wrap and refrigerate 20 minutes. Meanwhile, preheat oven to 200 degrees C. Grease two baking trays.
  4. On a lightly floured surface roll out dough to 5mm thick. Using a fluted cutter cut out as many rounds as possible. Reroll the trimmings and repeat. Place 3cm apart on the baking trays.
  5. Bake 8 minutes. Lightly beat the egg white and brush each biscuit top. Sprinkle with sugar and return to the oven until golden, about 5 minutes. Cool on wire racks.
