Cream Cheese Easter Biscuits

    These cream cheese biscuits are made with prepackaged cake mix so they are super easy. Rolled in icing sugar they look very festive, perfect for Easter!

    Makes: 40 biscuits

    • 120g butter, softened
    • 1/4 teaspoon vanilla essence
    • 1 egg
    • 220g cream cheese, softened
    • 1 (470g) box butter cake mix
    • icing sugar

    1. Beat the butter, vanilla, egg and cream cheese until light and fluffy. Mix in the cake mix. Chill in the fridge 30 minutes and preheat the oven to 170 degrees C.
    2. Lightly grease a large baking tray. By teaspoonfuls drop the dough into a bowl of icing sugar, roll into a ball and place on the baking tray. Bake 10-12 minutes.
