Easter Egg Biscuits

    Another great gingerbread recipe for Easter. You can find coloured icing pastes sold in tubes in baking goods stores and at Woolworths.

    Makes: 30 biscuits

    • 100g butter
    • 1 1/2 cups white sugar
    • 1/2 cup dark golden syrup
    • 1 1/2 tablespoons ground ginger
    • 1/2 tablespoon ground cloves
    • 1/2 egg
    • 1 tablespoon bicarb soda
    • 1/2 cup thickened cream
    • 4 1/2 cups flour
    • coloured icing pastes

    1. In a saucepan, melt the butter then stir in the sugar, molasses, ginger and cloves until well combined.
    2. Add the egg and bicarb soda and stir. Add cream and stir until well blended.
    3. Remove from the heat and stir in flour to make a firm dough. You might need to use your hands. Cover in plastic wrap and chill a few hours or overnight.
    4. On a floured surface, roll out the dough to 5mm thickness. Cut out biscuits with a small oval cutter and place on greased baking trays. Bake at 180 degrees C for about 5-8 minutes.
    5. Using one colour of icing, draw a line around the edge of the oval. Using different colours, draw zigzag lines across the middle to resemble a decorated Easter egg. Or add spots or stars. Make each biscuit different!
