Buttermilk Greek Easter Biscuits

    Very simple Easter biscuits with a cross on top like a hot cross bun. They are easy to make and quite low in fat - delicious!

    Makes: 15 biscuits

    • 1 1/2 cups plain flour
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 2 1/2 teaspoons baking soda
    • 60g cold butter
    • 3/4 cup buttermilk
    • plain icing, as needed

    1. Preheat oven to 220 degrees C. Grease a baking tray.
    2. Sift the dry ingredients into a bowl and rub in the butter until the mixture resembles coarse crumbs.
    3. Gradually add the buttermilk, stirring with a fork to make a firm dough. Roll the dough out to about 1/2cm thick. Cut out rounds with a 5cm biscuit cutter and place on baking tray. Bake 12-15 minutes or until golden. When cool, draw a cross on the top of each like a hot cross bun.
