Greek Yoghurt Biscuits

    My favourite Greek biscuits made with dried apricots and slivered almonds. Keep in mind that they do not keep well so eat them up!

    Makes: 16 biscuits

    • 1 1/2 cups plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon cinnamon
    • 1 cup rolled oats
    • 1/2 cup brown sugar
    • 1/2 cup dried apricots, finely chopped
    • 1 tablespoon slivered almonds
    • 2/3 cup Greek yoghurt
    • 3 tablespoons vegetable oil

    1. Preheat the oven to 180 degrees C. Lightly oil a baking tray.
    2. Sift together the flour, baking powder and cinnamon. Stir in the oats, sugar, apricots and nuts.
    3. Beat together the Greek yoghurt and oil, then stir into the mixture to make a dough. You may need a little more yoghurt.
    4. Roll the dough into 16 small balls, place on the baking tray and flatten with a fork. Bake 15-20 minutes or until golden brown.
