Cheddar Cheese Straws

These cheese biscuits are cut into long strips and quickly baked. They are best slightly warm but they will keep a day or so.

Serves: 6 

  • 140g butter, cut into cubes
  • 1 cup plain flour
  • 3 cups cheddar cheese, grated
  • 1 teaspoon salt
  • 1 egg, beaten
  • 2 egg yolks
  • pinch cayenne pepper

  1. Preheat the oven to 200 degrees C. Butter a baking tray.
  2. In a bowl, combine flour, half the cheese, salt, butter and egg yolks to make a dough.
  3. Roll out the dough to 1cm thick. Cut into strips with a sharp knife or pastry cutter. Lay the strips on the baking tray and sprinkle with remaining cheese and cayenne pepper. Bake 10 minutes.
