Gruyere Straw Biscuits

    Cheese straws are a fantastic biscuit and so more-ish. Normally you put Parmesan in but I think this recipe with Gruyere is even better.

    Serves: 6 

    • 150g butter
    • 1 cup plain flour
    • 1 cup Gruyere cheese, grated
    • salt and pepper, to taste
    • pinch cayenne

    1. Preheat the oven to 200 degrees C. Grease a baking tray.
    2. In a bowl combine the butter and flour and rub with your fingers until it resembles breadcrumbs.
    3. Add grated cheese, a dash of salt and pepper and the cayenne. Knead until smooth then roll tablespoonfuls of the dough into 5mm thick straws. Bake 20 minutes.
