Maple Peanut Cookies

    These are very elegant peanut cookies which are lovely served with a scoop of vanilla ice cream. They keep in an airtight tin for a week or two.

    Makes: 24 cookies

    • 60g unsalted butter
    • 1 1/4 cups brown sugar
    • 1/3 cup plain flour
    • 1 teaspoon maple essence
    • 1/4 teaspoon salt
    • 1 egg, lightly beaten
    • 2 cups unsalted peanuts, diced

    1. Preheat oven to 180 degrees C. Line a baking tray with foil.
    2. Melt butter in a saucepan. Remove from heat and stir in brown sugar, flour, maple essence, salt, egg and peanuts. Drop by tablespoonfuls onto the foil.
    3. Bake 12 minutes then cool on racks.
