Gluten Free Lemon Biscuits

    A very delicate gluten free lemon biscuit made from rice flour and tapioca starch. Feel free to ice with lemon icing if you like.

    Ingredients
    Makes: 36 biscuits

    • 100g butter, softened
    • 1/2 cup white sugar
    • 1/4 cup lemon juice
    • 1 teaspoon lemon zest
    • 1 1/2 cup rice flour
    • 1/2 teaspoon gluten free baking powder
    • 1/2 cup tapioca starch

    Directions
    Preparation:15min  ›  Cook:15min  ›  Extra time:30min freezing  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C.
    2. In a bowl combine the butter, sugar, juice and zest. Add the remaining ingredients and stir until smooth.
    3. Form dough into a ball, wrap and refrigerate 30 minutes. Pinch off lumps of dough, about 2 tablespoons, and roll into balls. Place on baking trays 5cm apart. Do not flatten them.
    4. Bake 15 minutes or until getting brown around the edges.
