Chop the prunes and place in a large glass jar with a lid. Pour in the alcohol, seal the jar and place in a cool dark place. Let infuse 2 months, shaking daily (or whenever you remember). Strain into a clean bottle.
Make a simple syrup by boiling together the sugar and water, stirring constantly. Let cool. Add to the prune cordial to taste - you won't need all the syrup but you can keep the remainder in the fridge.
Let the cordial mature in a dark place at least one month before drinking.
