Apple and Cinnamon Cordial

    This is a great cordial to make in autumn when apples are very fresh and crisp. I use Braeburn apples for their tartness.

    Makes: 3 cups

    • 1 kg Braeburn apples
    • 3 cinnamon sticks
    • 2 cups vodka
    • 1 cup brandy
    • 1 cup white sugar
    • 1 cup water

    1. Wash and core the apples and cut into slices.
    2. Before they have a chance to start browning, place the apple slices in a large glass jar, add the cinnamon sticks and pour in the alcohol. Seal the jar.
    3. Let the cordial infuse for 1 month in a cupboard, shaking daily. Strain into a sterilised bottle.
    4. Make a simple syrup by boiling the sugar and water together, stirring until the sugar is dissolved. Let cool, then add to the cordial to taste (you won't need all the syrup).
    5. Place the bottle in the cupboard and let age at least a month and up to a year.
