This lovely strawberry cordial with rosemary is very easy to make - the hardest part is waiting for it to age properly to be smooth.

Makes: 3 cups

  • 5 cups fresh strawberries, washed, hulled and diced
  • 5 small sprigs fresh rosemary
  • 3 cups (750ml) vodka or brandy
  • 1 cup sugar
  • 1 cup water

  1. Place the strawberries and rosemary in a large glass jar with a lid. Pour in the alcohol to cover and seal.
  2. Place the jar in a cupboard or other cool dark place and let infuse 2 months. Give it a quick shake each day. Strain into a bottle.
  3. Make a simple syrup by boiling together the sugar and water and letting cool. Add to the cordial to taste. Seal the bottle and let rest at least a month before drinking.
