Pineapple and Basil Infused Cordial

    This cordial combines the sweetness of tropical basil with the warm summery taste of fresh basil. Perfect for an afternoon by the pool.

    Makes: 3 cups cordial

    • 1 small fresh pineapple
    • 3 tablespoons fresh basil, diced
    • 3 cups (750ml) vodka
    • Simple Syrup
    • 1 cup sugar
    • 1 cup water

    1. Cut the rind off the pineapple and slice into rings.
    2. In a large glass jar with a lid, combine the pineapple and basil. Pour in the vodka and seal the jar tightly.
    3. Place the jar in a cool dark place and give it a gentle shake each day. Let infuse for at least a month then strain into a clean bottle.
    4. Make the simple syrup: combine the sugar and water in a saucepan and bring to the boil. Stir until sugar has dissolved and let cool.
    5. Add simple syrup to the cordial to taste. Place the bottle in a cool dark place and let rest at least another month before drinking.
