Chilled Honey and Lemon Mocktail

I love honey and lemon when I have a cold or sore throat and I wondered what it would be like cold in summer. It's wonderful!

- 1 slice fresh ginger
- 1 1/2 tablespoons honey
- 1 lemon, zested and juiced
- 1 cup water
- ice

- Combine the ginger, honey, lemon juice and zest and water in a small saucepan and bring to the boil. Remove from heat and let cool. When cool, strain and serve in a glass over ice.
