    I am not a big fan of copha, but I do love marshmallows! This is a great recipe that I have been using for a while now, it is quick, easy and copha free.

    Ingredients
    Serves: 12 

    • 2 tablespoons icing sugar
    • 3 tablespoons cocoa powder
    • 60g butter
    • 4 cups Rice Bubbles(TM)
    • 200g marshmallows

    Directions
    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. In a large bowl combine the icing sugar, cocoa powder and Rice Bubbles.
    2. Heat the marshmallows and butter slowly over a low heat until fully melted then combine with the Rice Bubbles mixture.
    3. Quickly spoon the chocolate crackle mix into patty cups then place in the fridge to set.

    I made these but halved the recipe as I didn't need a large number. Quick, easy too! I used the small cake-decorating marshmallows so these were quite quick to melt. When I combined all the ingredients it became very difficult to stir, VERY quickly, so I took the bulk mass out of one bowl and put it into another to 'work' it faster. This left some mixture unused. Also, when putting the mixture into small patty cases, two spoons couldn't allow me to do it fast enough, so I ended up wetting my hands and shaping them with my fingers and then placing them in the patty cases. This IS the way to do it. So quick, so easy!! Dust with icing sugar to present. I will use this recipe if ever I need to make these again.  -  04 Feb 2017

    I found that it was quite sticky so rolling them in the dry mixture that I had left over helped to finish them off, it also took longer than 15 minutes for me to melt the marshmallows. I absolutely love the taste, and is a fun recipe to do with family.  -  27 Nov 2015
