Blackcurrant Cordial

    If you can find fresh blackcurrants try making this delicious cordial which keeps well so you can enjoy the flavours of summer all year round.

    Makes: 3 cups

    • 1 kg fresh blackcurrants
    • 2 cups (500ml) water
    • 2 tablespoons lemon juice
    • 1 teaspoon citric acid
    • 1 2/3 cups white sugar

    1. Rinse the blackcurrants and place in a pan with the water, lemon juice and citric acid. Heat gently until the blackcurrants pop.
    2. Strain off the mixture through cheesecloth or a fine sieve. Add the sugar and bring the liquid back to the boil. Simmer 5 minutes.
    3. Skim off the foam and then pour the cordial into a clean sterilised glass bottle. Seal and store in a cool, dark place.
    4. To drink, dilute with cold water to taste.

    Citric Acid

    Citric acid is available in home brewing shops.
