Vegan Chocolate Chip Biscuits

    Makes: 24 biscuits

    • 2 1/2 cups plain flour
    • 1/2 teaspoons salt
    • 1 teaspoon bicarb soda
    • 250g vegan margarine
    • 3/4 cup brown sugar
    • 3/4 cup white sugar
    • egg substitute for two large eggs
    • 1 teaspoon vanilla essence
    • 2 cups dark chocolate chips

    1. Preheat oven to 180 degrees C. Oil two baking trays or line with baking paper.
    2. In a bowl, combine flour, salt and bicarb soda.
    3. In a separate bowl, cream the margarine and sugars. Add egg substitute and vanilla and beat until fluffy.
    4. Add 1/2 the dry ingredients and mix well. Add the remaining dry ingredients and beat until the dough is smooth. Add chocolate chips and stir. Form biscuits on the baking trays and bake 10-12 minutes.
