Vegan Oat and Raisin Biscuits

    Old fashioned sweet oat and raisin biscuits, made vegan through the use of margarine and egg substitute. A little cinnamon and nutmeg spice them up.

    Makes: 24 biscuits

    • 2 cups plain flour
    • 1 1/4 cups rolled oats
    • 1 teaspoon bicarb soda
    • 1 teaspoon cinnamon
    • 1/4 teaspoon nutmeg
    • 1/4 teaspoon salt
    • 250g vegan margarine (such as Nuttelex(TM))
    • 1 cup white sugar
    • 1 cup brown sugar
    • egg substitute for two large eggs
    • 1 teaspoon vanilla essence
    • 1 1/2 cups raisins

    1. Preheat oven to 180 degrees C. Lightly oil two baking trays.
    2. In a bowl combine the flour, oats, bicarb soda, cinnamon, nutmeg and salt. Set aside.
    3. In another bowl, beat the margarine and sugars until light and fluffy. Add the egg substitute and vanilla and beat again.
    4. Add 1/2 of the dry ingredients and beat to combine. Add remaining dry ingredients and raisins and mix until just combined.
    5. Place tablespoonfuls of the batter on the baking trays about 3cm apart. Bake 10-12 minutes or until firm around the edges, but don't overbake. Let cool.
