Almond Meringue Biscuits

    These almond meringue biscuits are absolutely melt in the mouth! They are lovely delicate biscuits best eaten with a cup of hot coffee.

    Serves: 8 

    • 4 cups almonds, finely chopped
    • 1 1/2 teaspoons baking powder
    • 1/2 cup breadcrumbs
    • 3 cups white sugar
    • 10 egg whites
    • 24 whole almonds

    1. Mix the almonds, baking powder and breadcrumbs with half the sugar. Beat the egg whites to stiff peaks and beat in the remaining sugar. Fold the egg whites into the dry ingredients.
    2. Preheat oven to 190 degrees C. Butter a baking tray and, using a pastry bag, form round biscuits about 5cm across. Press an almond into the centre of each. Bake until golden, about 15 minutes.
