Greek Easter Cookies

    These sweet butter cookies are found all over Greece at Easter time and are also a popular food gift. Roll them in coils or form them into an 'N' shape.

    Serves: 8 

    • 500g butter
    • 1 1/2 cups sugar
    • 4 egg yolks
    • 1/2 cup milk
    • 1 teaspoon vanilla
    • 1 teaspoon orange zest
    • 8 cups (1 kg) flour
    • 2 teaspoons baking powder
    • 1 egg, beaten

    1. Cream together the butter and sugar. Add the egg yolks one at a time, beating well after each addition. Stir in the milk, vanilla, orange zest, 2 cups of the flour and the baking powder. Mix well. Using your hands, work in the rest of the flour to make a stiff dough. Preheat oven to 180 degrees C.
    2. Take golf ball sized portions of dough and roll out into thin sausages. Roll them into coils and place on a an ungreased baking tray. Brush the tops with beaten egg.
    3. Bake for 20 minutes.
