Vanilla Easter Biscuits

    To make these Easter biscuits you must first make vanilla sugar, but it's very easy to do. Just combine a crushed section of vanilla bean with icing sugar and let sit.

    Makes: 36 biscuits

    • 1/4 vanilla bean
    • 2 cups icing sugar
    • 2 1/2 cups plain flour, sifted
    • 1 cup plus 1 tablespoon butter
    • 2 cups white sugar
    • 1 cup almonds, finely chopped

    1. Make vanilla sugar by crushing the vanilla bean and mixing it with the icing sugar. Let stand covered overnight.
    2. Preheat the oven to 180 degrees C.
    3. With your hands, rub together the flour and butter. Add the white sugar and almonds and mix well. Shape teaspoons of the dough into crescents.
    4. Bake on ungreased baking trays for 15 minutes. Let cool briefly, then sift vanilla sugar over the biscuits.
