Mexican Butter Biscuits

    These biscuits are called 'polvorones' in Mexico. They are very simple to make but very satisfying and not overwhelming. This recipe makes 50 biscuits.

    Makes: 50 biscuits

    • 220g butter, softened
    • 1/3 icing sugar
    • 1 egg yolk
    • 1 tablespoon rum
    • 2 cups flour
    • 1 cup white sugar
    • 3 tablespoons cinnamon

    1. Preheat the oven to 160 degrees C.
    2. Using an electric mixer, beat together the butter and icing sugar. Add the egg yolk and continue to beat the mixture. Add the rum and then gradually add the flour.
    3. With your hands shape the dough into about 50 balls, each about 3cm in diameter. Place on an ungreased baking tray and bake 25 minutes.
    4. In a bowl, combine the white sugar and cinnamon. When the biscuits have cooled enough to handle, roll in the sugar mixture.
