Easy Almond Macaroons

    To make these lovely almond biscuits you will need almond paste, which is available in tins in many supermarkets. It's not the same thing as marzipan.

    Makes: 18 macaroons

    • 220g almond paste, diced
    • 1 cup white sugar
    • 2 egg whites
    • 1/4 teaspoon almond essence
    • pinch salt

    1. Preheat oven to 160 degrees C. Line a baking tray with baking paper.
    2. Place the almond paste, sugar, egg whites, almond essence and salt in a food processor and blend until smooth.
    3. Drop the dough by spoonfuls onto the baking paper, about 4cm apart. Bake 30 minutes or until lightly browned. Cool on a rack.
