Greek Easter Biscuits

These lovely simple biscuits are usually made in Greece at Easter time. They are always sprinkled with sesame seeds and usually eaten with morning coffee.

Ingredients
Makes: 48 biscuits

  • 125g butter, softened
  • 1/2 cup icing sugar
  • 1 egg
  • 1/4 cup thickened cream
  • 2 tablespoons brandy
  • 3 cups plain flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 egg yolk
  • sesame seeds, to decorate

Directions

  1. Preheat oven to 180 degrees C.
  2. In a bowl, cream the butter and and sugar. Add the egg, cream and brandy and beat 5 minutes.
  3. In another bowl sift together the flour, salt and baking powder. Beat into the butter mixture, 1/2 cup at a time, to make a soft dough.
  4. Form the dough into 4cm balls, roll out the balls and shape them into twists. Brush with egg yolk and sprinkle with sesame seeds. Bake on ungreased baking trays for 30 minutes or until light golden.
