White Chocolate Chip Cornflake Biscuits

    Cornflakes make this chocolate chip biscuit lighter and crunchier. These are perfect for cake stalls because the recipe makes quite a lot.

    • 1/2 cup vegetable oil
    • 125g margarine
    • 1 cup brown sugar
    • 1 cup white sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 2 cups (250g) plain flour
    • 1 teaspoon bicarb soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 1/2 cups Cornflakes(TM)
    • 1 cup rolled oats
    • 1 cup white chocolate chips
    • 1/2 cup macadamia nuts, diced

    1. Preheat the oven to 190 degrees C. Lightly grease baking trays.
    2. In a large bowl, mix together the oil, margarine, brown sugar and white sugar until smooth. Beat in the eggs one at a time then stir in the vanilla.
    3. Combine the flour, bicarb soda, baking powder and salt; stir into the sugar mixture. Mix in the cornflakes, oats, chocolate chips and macadamia nuts. Drop by heaping teaspoonfuls onto the prepared baking trays.
    4. Bake for 12 to 15 minutes in the preheated oven, until golden brown. Allow biscuits to cool slightly on the baking trays before removing to wire racks to cool completely.
