Chocolate Chip Macadamia Cookies

    If you like a bigger cookie this recipe is for you. It features chocolate chips and macadamias. You can also press the dough into a baking tray to make bar cookies.

    Makes: 24 cookies

    • 250g margarine
    • 1 cup brown sugar
    • 1/2 cup white sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 2 1/4 cups plain flour
    • 1 teaspoon bicarb soda
    • 1 teaspoon salt
    • 1 cup macadamias, chopped
    • 2 cups dark chocolate chips

    1. Preheat oven to 180 degrees C.
    2. In a mixing bowl cream together margarine, brown sugar and white sugar. Stir in the egg and vanilla. In a separate bowl combine the flour, bicarb soda and salt then stir into the batter until evenly moistened.
    3. Stir in the nuts and chocolate chips. Drop by heaping spoonfuls onto ungreased baking trays.
    4. Bake for 8 minutes in the preheated oven until the edges are light brown.
