Gluten Free Pistachio Biscuits

    The dough for these pistachio biscuits must be prepared a day ahead and chilled before baking but they are otherwise super easy to make.

    Makes: 18 biscuits

    • 2 cups (170g) quick cooking oats
    • 3/4 cup (165g) white sugar
    • 2 teaspoons orange zest
    • 1/2 teaspoon salt
    • 1/2 cup (125ml) vegetable oil
    • 1 egg
    • 1/2 cup (60g) pistachio nuts, finely chopped

    1. Combine oats, sugar, orange zest and salt. Stir in the vegetable oil. Cover and refrigerate overnight.
    2. Preheat oven to 180 degrees C.
    3. To the chilled mixture, add the beaten egg and the nuts.
    4. Form biscuits with a teaspoon and place on an ungreased baking tray leaving a distance of about 4cm between each one. Bake 15 minutes or until done.
