Vegetable Bhaji Curry

    Do not add water and you will really enjoy this Bhaji, a drier variety of an Indian curry. You can add any other vegetables you want to use. Great with naan bread and rice.

    Ingredients
    Serves: 3 

    • 4 large potatoes, finely chopped
    • 1 cup cauliflower, cut into florets
    • 1 carrot, finely chopped
    • 1/2 cup peas
    • oil for frying
    • 1 large onion, chopped
    • 1 teaspoon each cumin seeds and mustard seeds
    • 2 bay leaves
    • 3 cloves garlic, finely chopped
    • 2 teaspoon minced ginger
    • 2 green chillies, seeded and finely chopped (or to taste)
    • 1/2 teaspoon chilli powder (optional)
    • 1 teaspoon cumin powder
    • 1 teaspoon curry powder

    1. Half-cook all the vegetables in microwave and drain.
    2. Heat some oil and fry onions till golden. Add the seeds and bay leaves and fry for few seconds.
    3. Add garlic, ginger and chillies and fry few more seconds.
    4. Add all the remaining spices and the vegetables and cook till done.
