Bow Tie Pasta with Tomato Sauce

Sometimes it is nice to get bake to the basics of a pure tomato pasta sauce served on a simple bed of pasta such as bow tie pasta (Farfalle). This is a great recipe for such an occasion.

Ingredients
Serves: 4
- Base Sauce
- 3 kg tomatoes, diced
- 1kg sugar
- 1 onion, diced
- 4 cloves garlic, diced
- 1 tablespoon salt
- 1/2 cup malt vinegar
- To Serve
- 3 tomatoes
- Parmesan cheese
- fresh basil, sliced
- 4 cups bow tie pasta, cooked

- Base Sauce: In a large saucepan slowly heat all the base sauce ingredients until sugar melts. Boil moderately for an hour or until sauce becomes pulpy, stirring occasionally.
- Puree the sauce using an immersion blender or in batches in a normal blender.
- To Serve: Blanch the tomatoes whole then peal the skin and remove the seeds. Dice and stir through the base sauce.
- In a serving bowl divide the bow tie pasta then top with the pasta sauce, Parmesan cheese and fresh basil.
Tip
Bow tie pasta is also known as Farfalle pasta or Farfalloni if they are larger.
