BBQ Tandoori Chicken Salad

    This is an easy Tandoori chicken recipe that I serve on a salad with a mint yoghurt dressing. It is a family favorite over summer.

    Serves: 4 

    • Mint Yoghurt Dressing
    • 2 cups plain yoghurt
    • 1/2 cup finely sliced mint leaves
    • Salad
    • lettuce, sliced
    • carrot, cut into matchsticks
    • cucumber, sliced
    • 2 coriander sprigs, torn
    • 2 sprig mint, leaves torn
    • Tandoori Chicken
    • 4 tablespoons tandoori paste
    • 4 tablespoons plain yoghurt
    • 4 chicken breasts

    1. Mint Yoghurt Dressing: Combine the yoghurt and mint then leave for the flavours to infuse while preparing the other elements of the salad.
    2. Salad: Combine the salad ingredients in a bowl and chill until needed.
    3. Tandoori Chicken: Combine the tandoori paste and yoghurt then smother over the chicken. Heat the BBQ to a moderate heat then add the chicken. Cook for about 20 minutes until cooked through.
    4. To Serve: In each serving bowl place a layer of salad, top with the chicken, you can slice if you want or leave whole. Finally top with the mint yoghurt dressing.
