Preheat the oven to 180 degrees C. Line a muffin tray with paper cups or sheets of baking paper.
In a bowl mix the flour, oats, bicarb soda and mixed spice in a medium bowl then make a well in the centre. In another bowl stir together the stewed apple, oil, brown sugar and eggs until the brown sugar has dissolved.
Pour the wet ingredients into the well in the dry ingredients then stir until just combined (do not over mix). Stir in the fresh apple.
Spoon the mixture into the muffin tray. Bake for about 20 minutes or until a skewer inserted in the centre of a muffin comes out clean. Cool the muffins on a wire rack. Sprinkle with icing sugar to serve.
