Apple Muffin

    This is a simple apple muffin recipe that uses stewed apples and oats to create a unique and tasty treat. I love the mixed spice but you can leave it out if you don't like that flavour.

    Serves: 12 

    • 1 1/2 cups (200g) plain flour
    • 1/2 cup (40g) porridge oats, finely ground
    • 1 teaspoon bicarb soda
    • 1/2 teaspoon mixed spice
    • 250g stewed apples
    • 2 tablespoons oil
    • 1/2 cup (100g) brown sugar
    • 2 medium eggs
    • 1 large green apple, peeled, cored and diced
    • icing sugar, to serve

    1. Preheat the oven to 180 degrees C. Line a muffin tray with paper cups or sheets of baking paper.
    2. In a bowl mix the flour, oats, bicarb soda and mixed spice in a medium bowl then make a well in the centre. In another bowl stir together the stewed apple, oil, brown sugar and eggs until the brown sugar has dissolved.
    3. Pour the wet ingredients into the well in the dry ingredients then stir until just combined (do not over mix). Stir in the fresh apple.
    4. Spoon the mixture into the muffin tray. Bake for about 20 minutes or until a skewer inserted in the centre of a muffin comes out clean. Cool the muffins on a wire rack. Sprinkle with icing sugar to serve.
