Mini Chocolate Cupcakes

    I like to keep the chocolate and sweet intake to a minimum, so this mini chocolate cupcake recipe is the ideal small serving solution.

    Serves: 18 

    • Cakes
    • 140g self raising flour
    • 120g butter, softened
    • 85g caster sugar
    • 2 eggs
    • 2 tablespoons cocoa powder
    • Icing
    • 100g icing sugar
    • water, as required
    • 100's and 1000's, as required

    1. Cakes: Preheat the oven to 180 degrees C. Line 3 mini cupcake trays with patty cups.
    2. Add the flour to a large bowl then add the butter, sugar, eggs and cocoa. Mix with an electric beater until smooth.
    3. Spoon the mixture into the patty cups, filling them 3/4 full. Bake for 10 to 12 minutes or until the sponge mixture feels firm when you touch it. Remove from the oven and cool.
    4. Icing: Add the icing sugar to a small bowl, slowly adding water until a runny icing is created. Fill a small shallow bow with the 100's and 1000's.
    5. Dip the cooled cupcakes into the icing then into the 100's and 1000's. Leave to set before serving.

    These cupcakes were really dry and crumbly and I cooked them for 2 mins less than indicated. The batter was very thick which I think contributed to the dryness. I iced them with chocolate buttercream icing to try to provide some moisture.  -  01 Nov 2015
