I know very little about Mexican, I call these baked burritos but apparently they are actually enchiladas. Either way it is an easy recipe that my whole family loves. I always make it to use up my leftover Chilli con Carne.
Lay out a tortilla then add a line of leftover chilli con carne down the centre, sprinkle with cheese and coriander. Roll, pin shut with a toothpick if desired then add to a baking dish. Continue until all the tortillas are gone or the dish is full.
Sprinkle the remaining cheese over the finished rolls then dust with the paprika to add some colour.
Bake in the over until they hot all the way through and the cheese is melted; about 15 minutes. Serve hot with a dollop of sour cream and guacamole.
