Baked Chilli Con Carne Burritos (Enchiladas)

    I know very little about Mexican, I call these baked burritos but apparently they are actually enchiladas. Either way it is an easy recipe that my whole family loves. I always make it to use up my leftover Chilli con Carne.

    Serves: 6 

    • 12 small tortillas
    • 1 batch of chilli con carne (leftovers)
    • 2 cups grated cheese
    • 1/2 cup diced coriander
    • paprika, to taste
    • sour cream, to serve
    • guacamole, to serve

    Preparation:20min  ›  Cook:15min  ›  Ready in:35min 

    1. Lay out a tortilla then add a line of leftover chilli con carne down the centre, sprinkle with cheese and coriander. Roll, pin shut with a toothpick if desired then add to a baking dish. Continue until all the tortillas are gone or the dish is full.
    2. Sprinkle the remaining cheese over the finished rolls then dust with the paprika to add some colour.
    3. Bake in the over until they hot all the way through and the cheese is melted; about 15 minutes. Serve hot with a dollop of sour cream and guacamole.

    How can you go wrong, it is an easy recipe that uses up left overs.  -  01 Jun 2015
