Leek, Bacon and Egg Pie

This is a simple leek, bacon and egg pie that I like to make for my kids. I try to sneak some vegetables in too when I get a chance, generally mushrooms, capsicum and zucchini work well.

Serves: 6 

  • 8 rashers bacon, diced
  • 60g butter, melted
  • 3 leeks, diced
  • 4 eggs
  • 1 1/2 cups milk
  • 1/2 cup self raising flour
  • 1 1/2 cups grated cheddar

Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Preheat the oven to 180 degrees C.
  2. In a frypan gently saute the bacon until it renders out some fat. Add the butter and leeks and gently saute until softened.
  3. Whisk thoroughly the eggs and milk. Add the flour, cheddar and bacon mixture then combine well.
  4. Pour the mixture into a quiche dish and bake for 25 minutes or until set.
