Spinach, Sweet Potato and Cauliflower Gratin

    A tasty vegetable gratin. Looking for "soft food" recipes for cancer patients, I wanted to provide interesting and tasty food as well as make sure it as soft and easy to swallow.

    Serves: 3 

    • 1 1/2 cups mashed sweet potato
    • 1 1/2 cups mashed potato
    • 280g frozen chopped spinach
    • 1/2 head cauliflower
    • 2 eggs
    • 1/2 cup fresh full cream
    • salt and pepper, to taste
    • 1/4 cup chopped fresh chives
    • 1/2 cup grated cheese

    1. Cook the sweet potato and potato or buy the ready to use versions. Thaw the spinach and press to remove the water/juices.
    2. Cut the cauliflower into small florets and cook until soft, then pulverise or mash until of a coarse/smooth texture to suit.
    3. Lightly whisk the two eggs and add the full cream then season to taste.
    4. Mix together the ordinary potato, cauliflower, chives and egg/cream mixture.
    5. In an ovenproof dish layer the sweet potato, spinach and the cauliflower egg mixture then add shredded cheese and warm through until the chess has melted. Crisp to taste or leave soft.
