Deconstructed Cottage Pie

The traditional cottage pie with a twist. Looking for "soft food" recipes for cancer patients, I wanted to provide interesting and tasty food as well as make sure it as soft and easy to swallow.

Serves: 2 

  • 450g finely minced beef
  • 1 tablespoon flour
  • 1 cup water
  • 2 beef stock cubes
  • 1 cup mushrooms, finely diced
  • 1 cup roasted red capsicums, finely diced
  • baby green peas, to suit
  • mashed potato, to serve

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Brown the beef, sprinkle the flour on the beef then add the cup of water and stock cubes. Adjust the amount of water until you reach a thickened consistency to suit. Add the diced mushrooms, red capsicums and peas then simmer gently until all the ingredients are soft.
  2. Serve with mashed potato.
