Vanilla Cupcakes with Lime Filling and Meringue

1. Mix butter and sugar with electric mixer until well combined.
2. Add eggs one by one until combined.
3. Sift in flour and fold into mixture. Add vanilla essence.
4. Spoon into prepared muffin tins. Bake at 180 degrees C (160 fan forced) for 15-20min or until skewer inserted into centre of cupcake comes out clean.
5. To make lime filling, combine lime juice and condensed milk in a small bowl. Stir until well combined.
6. Cut top off the cupcakes. Dig a small hole in centre and fill with small quantity of lime mix. Replace the top of cupcake.
7. To make the meringue, whip egg whites and tartar in a bowl.
8. Pipe meringue on top of cupcakes like icing. Bake at 210 degrees C for 3-5 minutes or until golden brown.
9. Serve once cooled.

Tip

If you are not a big fan of lime, use lemon juice instead of lime juice.
