Sweet Potato Salad with Ham

    The perfect use for leftover ham: a healthy sweet potato salad with apple and onion. You can also use store bought sliced ham for convenience but thicker ham is best.

    Serves: 4 

    • 1 kg sweet potatoes (kumara), peeled and chopped
    • 1/4 cup olive oil
    • 1/4 teaspoon garlic salt
    • pinch pepper
    • pinch ground ginger
    • 1/4 cup vinaigrette salad dressing
    • 1 cup leftover ham, diced
    • 1/2 cup apple, diced
    • 1/4 cup red onion, diced

    1. Preheat the oven to 200 degrees C.
    2. Place the sweet potatoes in a bowl and toss with olive oil, garlic salt, pepper and ground ginger. Spread on a baking tray and bake 10 minutes. Turn sweet potatoes and bake 10 more minutes. Let cool.
    3. Place the sweet potatoes in a salad bowl and pour over the vinaigrette. Add the ham, apple and onion then toss.
