Caesar Salad with Potatoes

    This is a combination of Caesar salad and potato salad which does not include the traditional romaine lettuce or croutons. Maybe it's more of a potato salad!

    Serves: 8 

    • 1 1/2 kg red potatoes
    • 2/3 cup celery, sliced
    • 1/2 cup red onion, diced
    • 2 tablespoons capers, minced
    • 1/2 cup Caesar salad dressing
    • 2 tablespoons Parmesan cheese, grated

    1. Wash the potatoes, place in a large saucepan and cover with water. Bring to a boil, reduce heat to a simmer and cook until potatoes are tender, about 15 minutes. Drain and let cool.
    2. Cut potatoes into quarters and place in a serving bowl. Add celery, onions and capers. Drizzle the dressing over and toss well. Garnish with Parmesan. You can also chill the salad for up to a day.
