Tabbouleh and Pasta Salad

    I thought I'd bulk up the usual tabbouleh by adding some bow tie pasta and it worked well. It's a simple salad to make with a lemon dressing.

    Serves: 8 

    • 1 cup bulgur
    • 220g bow tie pasta
    • 1 1/3 cups spring onions, diced
    • 1 cup continental parsley, finely diced
    • 1/2 cup mint leaves, torn
    • 1/2 cup cucumber, peeled and diced
    • 1/4 cup lemon juice
    • 1/2 cup olive oil
    • salt and pepper, to taste

    1. Place bulgur in a large bowl, cover with cold water and let soak one hour. Drain in a sieve.
    2. Cook pasta according to package instructions, about 12 minutes. Drain and place in a serving bowl. Add bulgur, spring onion, parsley, mint and cucumber.
    3. Add the lemon juice and olive oil and stir well. Add salt and pepper, to taste. Serve, or chill until needed.
