An easy and healthy quinoa salad with tomato, carrot, parsley and soy sauce for some saltiness. Serve as a side dish with a vegetarian main!

Serves: 4 

  • 1 cup quinoa
  • 1 1/2 cups water
  • 2 small tomatoes, diced
  • 1 carrot, grated
  • 4 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • parsley, to garnish

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Rinse the quinoa under running water and place in a saucepan with 1 1/2 cups cold water. Bring to a simmer, cover and cook until the water is absorbed, about 15 minutes.
  2. Combine the quinoa with the rest of the ingredients in a salad bowl, mix well and serve.
