Creamy Bacon and Mushroom Fettuccine

A quick pasta recipe that is full of flavour.

Serves: 2 

  • water, as needed
  • 1 tablespoon salt
  • 250g fettuccine pasta
  • 1 tablespoon olive oil
  • 4 cloves garlic, finely diced
  • 2 rashers middle bacon, finely diced
  • 200g mushrooms, sliced
  • 250ml white wine
  • 300ml thickened cream
  • 1 cup of continental (flat leaf) parsley, finely diced
  • 200g Parmesan cheese, grated
  • salt and pepper, to taste

  1. In a large saucepan, bring water to a boil with 1 tablespoon salt and cook fettuccine for 10-15 mins, or to your liking.
  2. Meanwhile, in a medium saucepan, fry garlic in 1 tablespoon of olive oil for 1 min until slightly browned. Add bacon and continue frying for another minute until the bacon begins to brown. Add mushrooms and fry for another minute then add wine and simmer until reduced by half.
  3. Add cream and stir gently until slightly thickened.
  4. Drain pasta, then add to sauce and stir through.
  5. Add parsley and parmesan cheese and stir through, combining well. Add salt and pepper to taste. Serve while hot.


Serve with garlic bread (optional).
