Warm Chicken Salad with Thai Salad Dressing

    A simple warm chicken salad comprised of leftover chicken, rice and a spicy Thai salad dressing of chilli, fish sauce and lime juice. You can use any kind of sprouts you prefer.

    Serves: 3 

    • 1 cup white rice
    • 2 small red chillies, seeded and minced
    • 6 sprigs mint, chopped
    • 2 tablespoons fish sauce
    • 2 tablespoons lime juice
    • 3 tablespoons olive oil
    • 1 3/4 cups snow pea sprouts
    • 2 cups cooked and shredded leftover chicken

    1. Cook the rice until done, drain and leave to cool a little.
    2. Make the dressing by combining the chillies, mint, fish sauce, lime juice and olive oil in a small bowl.
    3. Combine the snow pea sprouts and chicken in a serving bowl and toss with the dressing. Add the rice and toss again.
