Christmas Mince Pie Topping

    Alternative topping for your Christmas mince pies (tarts).

    Makes: 1 batch topping

    • 1 egg white
    • icing sugar, as needed
    • few drops vanilla essence

    1. Separate egg white into a bowl.
    2. Stir in sifted icing sugar until the mixture is fairly stiff but still a slightly runny consistency.
    3. Add a few drops of vanilla essence and also stir this into the mixture.
    4. Either place about half a teaspoon of the mixture on top of the mince tart or make a greaseproof paper piping bag and pipe the mixture onto each tart.
    5. Bake in the oven at 180 degrees C until the short pastry is cooked and the topping is slightly brown. This topping is not un-similar to a meringue topping, but very nice.


    Should you have several tarts to top you can just double the recipe. When the tarts are cool they can be placed in a sealed tin and will keep for ages.
