    This is a Lebanese style bread salad also known as fattoush. It's easy to make and practically a meal in itself. You could also add cooked chicken for a chicken salad.

    Serves: 6 

    • 3 small pita breads
    • 4 cups lettuce, chopped
    • 1 cucumber, diced
    • 2 cups cherry tomatoes, halved
    • 90g feta cheese, crumbled
    • 1/2 red onion, thinly sliced
    • 1/2 cup fresh mint leaves, roughly chopped
    • 2 green onions, thinly sliced
    • 2 sprigs parsley, roughly chopped
    • 4 tablespoons lemon juice
    • 1 teaspoon sugar
    • 1 teaspoon freshly ground pepper
    • 1/4 teaspoon salt
    • 1/4 cup extra virgin olive oil

    1. Preheat oven to 180 degrees C. Place pitas on a baking tray and bake 10 minutes or until dry and crisp, turning over after 5 minutes. Break up the pitas into largish chunks.
    2. In a salad bowl, combine lettuce, cucumber, cherry tomatoes, feta, onion, mint, green onions and parsley. Add the pitas and toss to combine.
    3. Make the dressing by whisking together the lemon juice, sugar, pepper, salt and olive oil. Drizzle over the salad and toss well.
