Chicken Salad Dressing with Yoghurt and Mustard

    This is a creamy chicken salad dressing which substitutes Greek yoghurt and vinegar for the traditional mayonnaise. I think the flavour is nicer. Also works with potato salad.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 teaspoon mustard
    • 1 tablespoon red wine vinegar
    • 1 tablespoon Greek yoghurt
    • salt and pepper, to taste

    1. In a bowl combine olive oil, mustard, vinegar, Greek yoghurt, salt and pepper. Serving idea: toss with cold chicken or potatoes.
