The distinctive taste of Chinese black vinegar adds a very tangy touch to this unusual Asian salad dressing. It's great over simple vegetables like sliced cucumber.

Serves: 2 

  • 4 tablespoons Chinese black vinegar
  • 1 tablespoon caster sugar
  • 1/2 tablespoon sesame oil
  • 3 tablespoons soy sauce
  • 1/2 tablespoon mirin
  • 1 tablespoon garlic, crushed
  • 1/2 tablespoon water

  1. In a bowl or measuring jug combine the vinegar, sugar, sesame oil, soy sauce, mirin, garlic and water. Taste and adjust as necessary.
