Soy and Ginger Thai Beef Salad Dressing

    This is a salad dressing intended for Thai beef salad but it adds mayonnaise for a creamy touch. Lovely over chilled rare beef, noodles and vegetables.

    Serves: 4 

    • 6 tablespoons soy sauce
    • 1 tablespoon rice wine vinegar
    • 1/2 tablespoon caster sugar
    • 2 medium garlic cloves, crushed
    • 1 tablespoon sesame oil
    • 1 teaspoon minced fresh ginger
    • 1/2 teaspoon chilli flakes
    • 2 tablespoons mayonnaise
    • 1/4 cup (60ml) vegetable oil

    1. In a measuring jug, mix together the soy sauce, rice vinegar, sugar, garlic, sesame oil, ginger and chilli flakes.
    2. Whisk in the mayonnaise until smooth, then add the oil in a steady stream, whisking as you go. Keep chilled until ready to use.
