Creamy Potato Salad Dressing

    This is the dressing I use for all my potato salads but it is especially good on salads that contain ham and grapes. Go easy on the salt and see how you go.

    Serves: 8 

    • 1/2 cup sour cream
    • 1/2 cup mayonnaise
    • 1 1/2 tablespoons Dijon mustard
    • 2 tablespoons cider vinegar
    • 1/2 teaspoon freshly ground black pepper
    • 1 teaspoon white sugar
    • 1/4 teaspoon dried dill
    • 1/4 teaspoon salt

    1. In a small bowl, whisk together all ingredients. Taste for salt.

    Instead of 1 1/2 tablespoons of Dijon mustard, I used 1 tablespoon of English mustard and instead of dill, I chopped up some fresh chives and 2 spring onions. I mixed all sauces etc first with a whisk and spoon mixed in the chives and spring onions and added my chopped potato and stirred again. I have never made potato salad and always bought shop bought. It tasted absolutely effin fantastic! Thanks for a great receipe that I will keep using! Not too sweet, not too sour and not too creamy! Just right! I'm just glad that little red riding hood won't be coming by tonight! lol  -  05 Feb 2015
