Peanut and Ginger Thai Salad Dressing

    Perfect for a chicken salad, potato salad or an Asian salad of mixed crunchy vegetables, this is a great dressing recipe to go with a summer night's barbecue.

    Serves: 4 

    • 1/3 cup smooth peanut butter
    • 2 tablespoons rice vinegar
    • 1/4 cup soy sauce
    • 1 tablespoon brown sugar, packed
    • 1 tablespoon Asian chilli garlic sauce
    • 1 tablespoon fresh ginger, finely diced
    • pinch of red chilli flakes
    • 3 tablespoons chicken stock
    • salt and black pepper, to taste

    1. In a blender, combine the peanut butter, rice vinegar, soy sauce, sugar, chilli garlic sauce, ginger, chilli flakes and chicken stock. Blend until smooth. Taste and season with salt and pepper. You can also thin it by adding more chicken stock or some water if it is too thick.
